I suppose the ZM NPCs have values in their lua/scripts/etc. For instance, an NPC would have a 'walkspeed' value set to, say, 50. In Hammer I theoretically could change the values by adding an extra keyvalue, in this case, 'walkspeed', and set it to another number. Do the ZM NPCs work that way?

I don't know if one can add keyvalues. Never heard of that.
Isn't the walkspeed determined by the animations and can't be changed easily?

Apparently so, according to cat and tGB.
I don't know about damage, but you can create a server plugin that does this.

I've seen the walkspeed increased in Smod. The walking animation is just speeded up in that case.
